happy wednesday, everyone. i hope everyone who encountered the severe storms last night is okay. i slept through all of it, so if anything bad HAD happened, i probably wouldn’t have noticed. i’m an incredibly heavy sleeper. ridiculous. anyway, it’s the middle of the week! so close to the weekend! i just have the rest of this week, next week, and then it’s finals and it’ll be summertime! i may have actually secured as summer job, so i’m pretty excited. i’ll possibly be working full time, but it’ll be good for me.
i’ve been cooking more again, or just making stuff at home, rather than going out to eat. i’ve saved money and felt better about it, but it’s still a struggle. i know i’ll eventually adapt to these habits, but i need to do what’s right, not what’s easy. as an experiment, i made homemade eggplant parmesean.
pieces of peeled and cut up eggplant. the eggplant was dipped in an egg/water wash (1 egg; 1/4 cup of water) to cut down on the amount of calories from the egg. the eggplant was then coated in a mixture of bread crumbs, garlic powder, and a dash of parmesean cheese.
delicious spaghetti to put the eggplant on top of! this was good spaghetti, too, and it’s a brand that’s better for you than others. mmm.
the eggplant was placed in a casserole dish, topped with homemade tomato sauce, and 1/2 cup of skim, low fat mozzarella cheese. it was placed in the oven for around 10 minutes to allow the cheese to melt. meanwhile, i made a fruit bowl!
fruit is delicious.
the only issue i had with this dish is the amount of sauce. i just did not make enough sauce! but, next time, i will. there are a couple of other things i’ll probably change, but otherwise, it was very good. i got the recipe from SparkRecipes, so it was low fat, low calorie, very filling AND a serving of vegetables!
i discovered something new and wonderful for my sweet tooth…
so, so good. 110 calories, no fat for a 1/2 cup serving. it’s cold, creamy, and perfect for an ice cream substitution. i also bought some Haagen Daaz Froyo in the peach flavor. so good, too, and much easier on my waist than full blown ice cream.
monday night, we made vegetarian corn dogs. i’m struggling to remember what i had with them, but i love corn dogs. i’m going to try to make my own vegetarian corn dogs over the summer because i found the recipe! awesome!
last night, i just used stuff i had at home to make dinner. i had some leftover eggplant, so heated that up along with
put some olive oil, salt, pepper, a little cajun seasoning and oregano, oven for 15 minutes BAM. homemade french fries. i also had a salad
spinach, cucumbers, green peppers, carrots, and a little bit of goat cheese topped with roasted red pepper vinaigrette! so delicious. i love having ingredients to make salads outside of the normal “iceburg lettuce and cheese” salads. regardless, i had an awesome dinner!
this week, i figured i’d do a little something different with my measurements/weight. since i usually compare the current week to the previous week, i wanted to change it up and compare my loss to my beginning measurements and weight. this week, i will be honest, i did gain a pound from my last weigh-in. but, that was almost a month ago, and i’d like to think that i gained muscle. anyway, leggooo!
